Vegan and Gluten Free Almond Cookies

Ingredients

  • 1 Bag of Chelsea Approved Sugar Cookie Mix
  • 1/2 Cup Oil
  • 1/3 Cup Water
  • 2 tsp Almond Extract
  • 1/2 - 1 cup Sliced Almonds
  • 2--3 TBSP Powdered Sugar (optional for sprinkling on top) 

Directions

  1. Heat oven to 375F.
  2. Prep the almonds: 
    1. Option 1: Roughly chop all the almonds to add into the dough if you would like almonds throughout the cookies
    2. Option 2: No prep, but wait to sprinkle them on top
  3. In a large bowl, add the Chelsea Approved Sugar Cookie Mix, oil, water, almond extract, and chopped almonds (if going with Option 1). Stir and kneed for a couple of minutes to form a ball of cookie dough (try not to over work, you want the dough to just barely come together, otherwise it gets sticky)
  4. Roll about half of the dough between 2 pieces of parchment paper to about 1/4 inch thickness. For Option 2, once the dough is flattened, sprinkle the sliced almonds on top and pass the rolling pin over a couple times to help the almonds stick
  5. Cut the cookie dough with your preferred cookie cutter (you may need to press a little harder to cut through the sliced almonds) and gently transfer to a baking sheet lined with parchment paper
  6. Continue to roll and cut the cookies until you've used all the cookie dough
  7. Bake the cookies for 8-12 minutes (longer will be more crispy) 
  8. Remove from oven and let the cookies cool completely on the pan
  9. Optional: Sprinkle the powdered sugar on top for an extra fancy look! 
  10. Enjoy!

Notes and Baking Tips:

1. Neutral Cooking Oil: You can use any high heat oil, but we recommend Canola Oil, Vegetable Oil, or Avocado oil. If you are going to use Coconut Oil, melt it in the microwave and then let it cool for a couple of minutes.
