The recipe utilizes our Banana Bread Mix as the base, and then calls for easy ingredients like applesauce, dairy-free yogurt, oil, and water to create a thick, smooth batter. Just fold in your blueberries and bake to make amazing muffins!

Ingredients
- 1 package Chelsea Approved Banana Bread Mix
- 2/3 Cup Unsweetened Applesauce
- 1/4 Cup Dairy-Free Yogurt
- 1/2 Cup Cooking Oil (avocado, canola, vegetable, etc)
- 1/3 Cup Water
- 1 tsp Vanilla Extract
- 3/4 Cup Blueberries (fresh or frozen)
- 1/2 Cup White Chocolate Chips (optional)
Directions
Step 1
Combine the Banana Bread Mix, applesauce, yogurt, oil, water, and vanilla into a bowl and stir until it forms a smooth, thick batter.
Step 2
Gently fold in the blueberries and white chocolate chips (if using).
Step 3
Portion the batter into a muffin tin.
Step 4
Bake at 375F for 18 - 22 minutes, or until a toothpick comes out clean (internal temperature should be 200F).
Step 5
Let the muffins cool in the pan, and then transfer to a cooling rack, then enjoy!
Bonus tips
If you are feeling ambitious, you can also add a coconut oat crumble to the top, or a white chocolate drizzle!
You can even play around with the recipe and add your fruit of choice. The muffins turn out just as good with fresh strawberries or raspberries!
