Vegan Strawberry Buttercream Frosting

Chocolate Cupcakes

  1. Heat oven to 375F.
  2. Add the Banana Bread Mix, cocoa powder, and sugar to a bowl, and stir.
  3. Add the oil, water, vanilla, and applesauce, and stir until a smooth batter is formed.
  4. Prepare a muffin tin with paper liners.
  5. Pour the batter into muffin tin.
  6. Bake muffins for 25-30 minutes (until a toothpick comes out clean). Internal temperature should be 200F.
  7. Remove from oven and let cool for 15 minutes before transferring to a cooling rack.
  8. Let cool completely before frosting.

Strawberry Frosting

  1. Remove 1/3 cup vegan butter from the fridge, and let warm to room temperature.
  2. Puree the strawberries using a food processor/blender.
  3. Blend the butter and strawberries together to form a smooth mixture (recommend using a food processor or electric beaters).
  4. Add the powdered sugar to the butter-strawberry mixture. Add 1 cup at a time and mix until combined until all the powdered sugar is mixed in and it creates a smooth frosting.
  5. Cool the frosting in the fridge for at least 15 minutes.
  6. Frost the cupcakes, and enjoy!

Notes and Baking Tips

1. Neutral Cooking Oil: You can use any high heat oil, but we recommend Canola Oil, Vegetable Oil, or Avocado oil. If you are going to use Coconut Oil make sure it is rated for high heat, and melt it in the microwave before mixing with the mix.
