  2. In a large bowl, add the Chelsea Approved Banana Bread Mix, cinnamon, pumpkin spice, and sugar. Stir a few times to mix.
  3. Add the canned pumpkin, water, oil, and vanilla to the bowl with the dry ingredients. Stir until thoroughly combined into a thick, smooth batter.
  4. Prepare a 1/2 baking sheet lined with parchment paper.
  5. Pour all the batter onto the 1/2 baking sheet and spread the batter evenly across to create a thin cake layer.
  6. Bake the bake for 20-30 minutes until a toothpick comes out clean.
  7. Roll and Cool: Once baked to perfection, carefully roll the warm cake along with the parchment paper into a log shape. Allow it to cool completely.
  8. Mix the cream cheese frosting ingredients in another bowl until a smooth frosting forms.
  9. Gently unroll the cooled cake and spread a generous layer of vegan cream cheese frosting across its surface.
  10. Roll the cake back up, this time without the parchment paper, ensuring the frosting creates a beautiful swirl at the center.
  11. Wrap the pumpkin roll in plastic wrap and place it in the fridge. Making sure the plastic wrap is snug will help the roll hold its shape for cutting.
  12. To Serve: Remove the pumpkin roll from the fridge and unwrap it. Sprinkle some powdered sugar on top, and serve!

Notes and Baking Tips:

1. Neutral Cooking Oil: You can use any high heat oil, but we recommend Canola Oil, Vegetable Oil, or Avocado oil. If you are going to use Coconut Oil, melt it in the microwave and then let it cool for a couple of minutes.
