- 1 bag Banana Bread Mix
- 2 TBSP sugar
- 2 -3 tsp cinnamon
- 1/4 tsp nutmeg
- 2/3 cup oil
- 1/3 cup water
- 1 tsp vanilla
- 2 cups shredded zucchini (peeling is optional)
Baking:
To make the zucchini bread, all you have to do is shred the zucchini, combine all the ingredients into a bowl, add the batter to your favorite bread loaf or muffin tin, and bake! After baking, let the loaf cool for about 30 minutes before slicing, and serve!

- 2 TBSP Sugar
- 2 - 3 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 tsp Vanilla
- 2/3 Cup Oil (see notes)
- 1/3 Cup Water
- 2 Cups Shredded Zucchini (peeling is optional)
Directions
- Heat oven to 375F.
- Shred the zucchini using a standard grater. Measure 2 cups and place into a small bowl to the side.
- In a large bowl, add the Chelsea Approved Banana Bread Mix, cinnamon, nutmeg, and sugar. Stir a few times to mix.
- Add the zucchini, water, oil, and vanilla to the bowl with the dry ingredients. Stir until thoroughly combined into a thick, smooth batter.
- Prepare a bread pan or muffin tin by coating with oil or lining with parchment paper.
- Pour all the batter into a bread pan or muffin tin.
- Bake the loaf for 50-60 minutes and the muffins for 20-40 minutes until a toothpick comes out clean (the muffin timing will depend on the size of the muffins).
- Remove from oven and let rest in the pan for 15 minutes before transferring to a cooling rack.
