Banana Bread is one of my go-to’s for weekend breakfast. I love smashing the bananas while mixing, and then smelling the whole house filled with the delicious aroma of the baking banana bread! This banana bread recipe will be your new favorite. It’s the quality and taste of banana bread made from scratch, but with the ease of a baking mix! Instead of the baking mix having banana flavor incorporated, this recipe calls for 3 ripe bananas, so you know it’s going to be good and taste delicious! The best part is that you can share it with almost anyone. The finished bread doesn’t have any ingredients with gluten, dairy, eggs, soy, nuts, or peanuts, so you can share no matter what someone’s diet is!

Ingredients
- 1 Bag of Chelsea Approved Banana Bread Mix
- 3 medium-sized ripe bananas
- 2/3 Cup Neutral Cooking Oil (see notes)
- 1/3 Cup Water
Directions
- Heat oven to 375F.
- Mash bananas in a large mixing bowl. Add oil and water, stir until combined.
- Add all the dry mix to the wet ingredients and mix thoroughly.
- Pour all the batter into an oiled bread pan.
- Bake banana bread for 50-60 minutes until a toothpick comes out clean.
- Remove from oven and let rest in the pan for 15 minutes before transferring to a cooling rack.

1. Neutral Cooking Oil: You can use any high heat oil, but we recommend Canola Oil, Vegetable Oil, or Avocado oil. If you are going to use Coconut Oil, melt it in the microwave and then let it cool for a few minutes. Using hot oil will make the cookies spread out and become crispy in the oven.
2. Muffins: This banana bread comes out great as a loaf or as muffins! For a dozen muffins, pour the batter into a lightly oiled 12-muffin pan and bake for 25-35 minutes. You can also bake 36 mini muffins or 6 large muffins, just check regularly until they are done.
