EASY Vegan and Gluten Free Carrot Cake Recipe

Enjoy the best gluten free and vegan carrot cake! This cake is sweet, moist, and flavorful! This delicious cake is a great inclusive option because it's gluten free, dairy free, egg free, nut free, and peanut free! Bake and share with everyone!

Ingredients

Vegan and Gluten Free Carrot Cake
  • 1 bag Chelsea Approved Banana Bread Mix
  • 1 1/2 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1/4 tsp Ground Nutmeg
  • 1/4 tsp Ground Cloves
  • 2 Cups Grated Carrots (about 3 large)
  • 2/3 Cup Oil
  • 1/3 Cup Water
  • 1 tsp Vanilla Extract
Dairy Free Cream Cheese Frosting
  • 8oz Container of Dairy Free Cream Cheese
  • 3 - 3 1/2 Cups Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions

Gluten Free Carrot Cake
  1. Heat oven to 375F.
  2. In a large bowl, add the Chelsea Approved Banana Bread Mix with the ground spices. Stir a few times to mix.
  3. Add the grated carrot, water, oil, and vanilla to the bowl with the dry ingredients. Stir until thoroughly combined into a thick, smooth batter.
  4. Prepare a cake pan (round or square) by spraying with oil or lining with parchment paper.
  5. Pour all the batter into the pan.
  6. Bake for 30-45 minutes until a toothpick comes out clean (target internal temperature of 200F).
  7. Remove from oven and let rest in the pan for 15 minutes before transferring to a cooling rack.
  8. Once cooled, frost with the cream cheese frosting.
Dairy Free Cream Cheese Frosting
  1. Add the cream cheese to a large bowl, and beat with an electric beater for about 1 minute until it's a smooth, creamy texture.
  2. Add the vanilla extract and beat to combine.
  3. Slowly add the powdered sugar (1 cup at a time) and beat until fully combined. Continue adding powdered sugar until the desired texture is achieved.
  4. Frost the cake, and enjoy!
