Introducing the BEST gluten-free and vegan chocolate chip skillet cookie you’ve ever had!

Growing up, the skillet cookie at a restaurant near our childhood home was me and my siblings favorite dessert! Going to the restaurant was always a family affair, with my aunt and uncle joining in. The seven of us would squeeze into a booth for a fun-filled dinner of goofy stories and laughter. We didn’t get dessert every time, but when we were able to convince my parents to get it, we were always so excited! When it was time for dessert, the long-awaited cookie skillet would arrive! This cookie came out warm and gooey, covered in hot fudge and vanilla ice cream. YUM! My uncle would pass around the spoons, we would get ready, and on the count of 3… 2… 1… DIG IN! It was chaos as we fought for the best bites of ice cream and cookie. In seconds, the cookie would be gone, and we would be scraping off the last crumbs of cookie and hot fudge. We all left happy, and full of cookie goodness! 


Chelsea is now gluten free/dairy free and I’m vegan, so we haven’t had that cookie skillet in years! After we developed our gluten free and vegan chocolate chip cookie mix, we knew we had to try it out in a skillet! I’ll be honest, I thought it was going to take a few attempts to get it right, especially with the way a skillet holds the heat. We held our breath while we baked the first skillet cookie, checking on it every few minutes. When it had a beautiful golden brown color, we pulled it out of the oven and impatiently let it rest. After a few minutes, we took our first bites, and it was AMAZING!! Topped with vegan chocolate sauce, it transported us right back to our childhood!


You won’t be able to get enough of this amazing dessert! This vegan skillet cookie is perfect for sharing with family and friends. Cover with your favorite gluten free/vegan toppings, pass around the spoons, and enjoy!

Ingredients

  • 1 Bag of Chelsea Approved Chocolate Chip Cookie Mix
  • 1/2 Cup Neutral Cooking Oil (see notes)
  • 1/4 Cup Water
  • 1 Teaspoon Vanilla Extract

Directions

  1. Heat oven to 375F.
  2. Combine all of the ingredients in a bowl and mix thoroughly.
  3. Transfer the dough into one 10-inch cast iron skillet or two mini 6-inch skillets.
  4. Press the dough into the skillet/s until it’s an even thickness.
  5. Bake the skillet/s for 25-30 minutes, until the edges of the cookie starts to brown. Bake time is about the same for one 10-inch skillet and two 6-inch skillets.
  6. Remove from oven and let rest for 10 minutes.
  7. Add your favorite toppings, and DIG IN!
