Ingredients

  • 1 Bag Chelsea Approved Banana Bread Mix
  • 2/3 Cup Oil (canola, vegetable, avocado, etc)
  • 1/2 Cup Water
  • 1/2 Cup Unsweetened Applesauce
  • 1/2 Cup Lemon Juice (about 3 lemons)
  • 1 1/2 - 2 TBSP Lemon Zest (about 3 lemons)
  • 2 TBSP Poppy Seeds

Directions

  1. Heat oven to 375F
  2. Combine all wet ingredients into a mixing bowl and whisk to combine.
  3. Add the banana Bread Mix and Poppy Seeds, and stir to form a smooth batter.
  4. Prepare a muffin pan by spraying with cooking spray or adding muffin liners.
  5. Pour all the batter into he muffin pan.
  6. Bake the muffins for 15 - 30 minutes, depending on the size of the muffins. They are done when a toothpick comes out clean.
  7. Remove from oven and let rest in the pan for 15 minutes before transferring to a cooling rack.
  8. Enjoy!
