As a native Vermonter, I grew up going to brunch on Sunday’s with my family and eating a big plate of pancakes covered in Maple Syrup. After my sister became gluten free and dairy free and I switched to a vegan diet, Sunday brunch became “Pancake Experiment Day,” where we would try to find the best pancake recipe for all of us to eat. Some were ok and some were down right terrible! We decided we needed a better recipe that the gluten-lovers could enjoy just as much as the gluten free and vegan family members. After countless batches, we did it! These pancakes are not only gluten-free, dairy-free, and egg-free, but are so quick to make. All you have to do is add water and vanilla extract to get the most perfect pancake stack! And for all the waffle lovers out there, we’ve got you covered. This recipe is so simple, you just pour the batter into the waffle maker and have delicious waffles in minutes. No added ingredients or special treatment needed.

Ingredients
- 1 cup of Chelsea Approved Pancake Mix
- 3/4 cup water
- 3/4 teaspoon Vanilla Extract
Directions
Step 1
- Combine ingredients in a bowl and mix thoroughly.
- Heat a pan or griddle to medium heat.
- Spray or coat lightly with oil.
- Using a 1/3 measuring cup, pour batter into pan (making 6 medium sized pancakes total). Cook until small bubbles form and the bottom starts to brown.
- Flip the pancakes, and cook until done.

1. Waffles: This pancake mix makes amazing waffles! No additional ingredients or steps needed. Just mix the batter, pour into the waffle maker, and cook until done!
Depending on the heat of your waffle maker, the waffles will maintain a very light color. Be carful not to overcook them or they will become very crispy on the outside.
2. Additions: Whether you are making waffles or pancakes, this batter holds up really well to inclusions. Add your favorite chopped fruits or vegan chocolate chips to the batter and cook as normal.
